Chocolate Orange Creme Brule

Yields 8 x 125ml ramekins

Ingredients:

112gr. dark chocolate, chopped

430ml heavy cream

6 large egg yolks

1 large egg

125ml sugar

430ml milk

30ml grand marnier

5ml orange zest

60ml sugar

Directions:

Preheat oven to 325F

Heat 125ml cream, add chocolate, melt

Whisk together egg yolks, whole egg, and 125ml sugar

Heat remaining cream, milk, and orange zest over medium heat till jus below boiling point

Slowly strain over whisked eggs, add melted chocolate mixture;

Add grand mariner. Divide mixture between 8 ramekins and place oven proof dish. Fill with water, reaching 1/2 way to 3/4 up the sides of the ramekins. Bake till set

Remove from oven, cool in water bath 25-30 minutes

Remove from water bath, wrap, and store in fridge at least 4 hours.

When ready to serve, remove from fridge and unwrap. With a paper towel, remove any extra moisture on top of brulés.

Divide 60ml sugar among top of brulés and caramelize with a torch.

Serve
