One of my earlier videos from our subscription site. Have learned a lot since then on videos, but still wanted to share this one. The recipe is so good!
Chorizo Sausage mac and cheese
Serves 4-6
Ingredients
4 T butter
1 onion, sliced thin
1 jalapeno, seeds removed, and finely diced
2 minced garlic cloves
1.5 lb chorizo sausage (We have a great recipe for chorizo on our subscription site)
3 T flour
2 tsp chilli powder
½ tsp cumin
1 12oz bottle Mexican beer
½ cup cream
1 lb shredded cheese
2 cups dried macaroni, cooked al dente
For topping:
2 T butter
2/3 cups bread crumbs
Direction:
-Heat 4 T butter in thick bottomed pot; add onions and sauté till golden
-Add the garlic and the peppers; cook 2-3 minutes
-Add chorizo, breaking it up with a spoon till fully cooked
-Add flour, cumin, and chilli; stir to form a roux
-Slowly add beer, whisking to prevent lumps. Once beer is gone, add the cream and cheese. Simmer gently till cheese has melted; add cooked macaroni; stir and pour into oven proof dish
-for topping, mix butter and bread crumbs together; sprinkle over macaroni -bake in 350 degree oven 50-60 minutes; or till golden on top and heated through
