Cider braised beets greens with guanciale

Serves 2-3 as a side

Ingredients:

15ml canola oil

100gr. guanciale, diced

1/2 onion, julienned

1 tsp minced garlic

1 liter trimmed, washed and chopped beet greens

60ml brown sugar

125ml apple cider

80 ml water

15 ml apple cider vinegar

Directions:

Heat oil in pan, add guanciale and cook till crispy Add onions, sauté till begin to caramelize Add garlic, sauté 1-2 minutes Add remaining ingredients, season with salt and pepper, cover and braise till greens tender(approx 10-12 minutes) Watch end of video for options at this point!
