Cowboy beans

Yields approx. 3.5 liters

Ingredients:

15ml canola oil

1/2 lb bacon (try the beer brined or chipotle cured bacon for this recipe)

1 small onion, diced

15ml minced garlic

salt and pepper

125ml barbecue sauce (our Cooking Beyond Recipe subscription site has some great bbq sauce recipes)

125ml coffee

125ml ketchup

30ml yellow mustard

15ml Lea & Perrins

15ml apple cider vinegar

1lb ground beef

3 x 398ml tins pork and beans

1 x 398ml tin white beans, drained and rinsed (I used butter beans)

1 x 540ml tin kidney beans or black beans, drained and rinsed (I used black beans)

30ml chili powder

80ml brown sugar

Directions:

Heat oil, add bacon and begin to crisp

Add onion, cook till soft and translucent

Add garlic, sauté 2-3 minutes

Add bbq sauce, ketchup, yellow mustard, coffee, and vinegar

Add beef, and breakdown with a potato masher

Add remaining ingredients, simmer till thick

Taste, adjust seasoning.

Serve or chill for later use
