Orange, fennel, onion, and spinach salad

Serves 2-4

Ingredients:

2 oranges, peeled, sliced

1/2 head fennel, sliced

1/4 red onion, sliced

3 cups spinach leaves

red wine vinaigrette to lightly coat salad (approx 60ml)

Directions:

Toss and serve

1.25ml dried oregano

5ml dijon mustard

5ml honey

75ml red wine vinegar

160ml extra virgin olive oil salt and pepper to taste

Combine, whisk well
