Grown up beefaroni
Serves 4-6 people
Ingredients:
30-45ml canola oil
1/2 onion, small dice
6 cremini mushrooms, sliced
1/2 red pepper, diced
5ml minced garlic
454gr. ground beef
1 x 796ml tin canned diced tomatoes, drained
15ml tomato paste
5ml paprika
7.5ml dried oregeno
1.25ml dried thyme
2.5ml dried parsley
2.5ml dried ancho chilies powder
250ml candied garlic tomato sauce
875ml dried macaroni noodles; cooked
80ml ricotta cheese
250ml mozzarella cheese, shredded
Directions:
Heat 30ml oil (you can add more later if needed)
Sauté onions, mushrooms, and peppers till soft
Add garlic, cook 2-3 minutes
Add ground beef, cook, breaking down with a potato masher or back of a wooded spoon
Add drained canned tomatoes, tomato sauce, tomato paste, and spices; simmer till beef cooked
Add noodles, mix; add ricotta mix
Sprinkle with cheese and and bake in a preheated 350 oven 15-20 minutes. Remove from oven, let sit 3-5 minutes before serving
