Sorrel and leek frittata
Serves 2-4 people
Ingredients:
30ml oil or butter
1 leek, trimmed, washed, and sliced thin
250ml packed sorrel, julienned
6 eggs, whisked
60ml milk
250ml cheese (I used gouda in the video)
salt and pepper to taste
Directions
Preheat oven to 350 degrees
Heat oil or butter and sweat the leeks, add sorrel and cook till reduced,
Season with salt and pepper
Combine eggs and milk, add to pan, cook till begins to set
Top with cheese and place in oven; bake till set
Allow to cool a few minutes before sliding out of pan
Remove from pan, cut, and serve.
