Water Buffalo taco filling

Yields approx. 2lbs filling

Ingredients:

15ml canola oil

60gr. finely diced red onion

2lbs ground water buffalo

45ml southwestern spice mix

250ml prepared salsa

125ml water

Directions:

Heat oil in pan, add onion, saute till soft

Add ground water buffalo, cook 5-8 minutes, breaking up with a potato masher

Add seasoning, saute 2-3 minutes

Add salsa and water’ simmer 5-8 minutes

Season with salt and pepper

Serve right away, or cool, and freeze for later use
